The first English edition of Menon's hugely influential Cuisinière Bourgeoise (1746). Menon's aims were similar, if a bit more rarefied, to Hannah Glasse's - to bring practicality and common sense to cookery. For comparison, Menon's recipe "To Roll a Turkey" and La Chapelle's "Young Turkies in the Shape of a Foot-Ball" are very similar but the former leaves out the veal, calf's udder, partridges, pistachios, and truffles.
